So I am getting ready to get my stuff out and making my stuff to frezze. If anybody has something yummy please add it below. I have a ton so I am going to pull them out and then find them online to give you the links. I will only do the really yum ones.

Lentil Soup
3 cloves garlic, diced
2 c. diced onions
3 c. dried lentils (red or green, it doesn't matter)
7 c. water
2 large stalks celery, diced
2 medium carrots, diced
1 large potato, peeled and diced
1 tsp. basil
1/2 tsp. thyme
1/2 tsp. oregano
1 large bay leaf
1 28 oz. can of diced tomatoes
salt and pepper to taste

1) Starting in your large soup pot: saute onions in 3 tbls of olive oil over medium heat until they are clear, add garlic and saute being careful not to brown the garlic.

2) Add the lentils, water and some salt to taste.

3) Add vegetables, canned tomatoes, herbs and pepper to taste.

4) Partially cover and let simmer (do not let it boil like crazy) until the lentils and veggies are tender and the soup tastes like it has come together (i.e. tastes done, not just like water with stuff in it).

Freeze the soup in 2 or 4 person portions. To thaw, we normally pull a container of it and let it sit in the fridge overnight. You can also microwave thaw it for a bit then finish in a pot.

I was going to do this but we ended up buying a bunch of frozen meals from SAMS last weekend and my MIL will be staying for a bit after Abby gets here and she will do all the cooking.

Baked ziti is a great one to freeze. Also chicken and broccoli casserole.

I bought little disposable containers that basically only hold 2 or 4 servings. I've got a side by side (with 4 shelves) and basically only one shelf is occupied by this stuff. Don't get me wrong, that shelf is completely packed. The rest of my freezer just has ice cream and frozen veggies so I had the room Smile

And I agree, baked ziti is a great one. I was going to make that this weekend with spinach and mushrooms (to get some veggies in).

We have two refrigerators with top freezers and a large chest freezer. The fridge in the house has veggies and french fries in it. The fridge outside (for hubby's home brewed beer) has mugs, more veggies, and ice cream in it. The chest freezer has a side of beef, frozen meals, quick fixins like pizza pockets, nuggets, breakfast pars, corn dogs, etc. All of them are packed full though.

That's awesome! We definitely wanted our space and my mom isn't the best cook (bless her, she does certain things really well, but it's not really her thing) so I figured this was a good option for the two of us. My hubby informs me he doesn't mind cooking either. We'll see Wink

Crazy mom - We do the novice Mr. Beer thing and we're brewing a "baby brew" this weekend for post baby. Has your hubby brewed something up to announce Abby's arrival?

The IPA he brewed should be just right for after Abby is born. His specialty is dark brews, which I don't care for. He does plan to brew a cider ale for me to have this summer.

We have found that while the brew is good after fermentation but 6 months after.....ahhh, perfection!

I have a big chest frezzer in the laundry room. Right now it has maybe 4 or 5 frozen pizza's in it. So I will have room to do 6 months worth of dinners if I wanted to. I just want to do them for the first month. More or less the week dh goes back to work, because then I will be on my own with 4 kids.

Thanks for all these great ideas! I've gotta start doing this. We only have a normal freezer, but I think we can play jigsaw puzzle and get quite a few things in there.
